Vegetarian Tacos

Tired of everyone wanting something different for dinner?  Well, here’s your answer.

Heat up some taco shells and refried beans, set out your favourite topping ingredients and let everyone build their own tacos.

For non-vegetarians

Shell,  devein and grill around 200g of prawns per person.

Cooking smarter tips

Save prep and cleanup time by purchasing 150g shelled and deveined prawn meat for each non-vegetarian, instead of cleaning the prawns yourself.

The recipe makes 8 large tacos.  Change ingredients and quantities to suit your own taste.

Essential ingredients:

8 large taco shells or tortillas, warmed
1 can refried beans (drained), or kidney beans
2 cups Cos lettuce, shredded
2 medium tomatoes, diced
2 cups tasty cheese, shredded
purchased taco sauce
purchased salsa

Optional ingredients

avocado slices
thinly sliced onions
3⁄4cup sour cream
sliced black olives
thinly sliced jalapenos
lime wedges to serve
shelled and deveined prawns


Heat beans in small saucepan.
Grill prawn meat if using.
Place beans, prawn meat, warmed taco shells and your toppings of choice into serving dishes.
Let everyone serve themselves.
