Scalloped Potatoes

Pure comfort food. An easy-to-follow scalloped potatoes recipe with potatoes, cream and cheese baked to perfection.


Prep time:  15 mins | Cook time: 60 min | Serves: 2

Ingredients

375 g Sebago potatoes
salt, pepper
130 ml pouring cream
250 g shredded cheddar or Italian blend cheese

20 g butter to grease baking dish

Method

  1. Preheat oven to 180 degrees
  2. Peel potatoes and slice to 1/8″/3mm thick
  3. Layer 1/3 potato in greased ovenproof dish
  4. Top with 1/3 cream, salt, pepper and cheese
  5. Repeat for 2 more layers, finishing with a layer of cheese
  6. Cover with foil and bake for approx 30 min
  7. Remove foil and bake for another 30 minutes until  cheese is golden and potatoes are tender.

NOTES:

  • This recipe makes two large side servings.  Adjust quantities to suit your requirements; it won’t affect the cooking time.
  • If potatoes begin to brown to fast in Step 7, re-cover with foil until potatoes are cooked.
