Brie in Puff Pastry | Baked Brie

Brie in Puff Pastry and Baked Brie are both easy to make – really easy –  and look special on a cheese platter, or  with a selection of appetisers.

My favourite is the basic recipe for Brie en Croute below, but if you’d like something a little different, the options to adapt brie en croute to suit your own taste are endless. 

Paula Deane adds walnuts and cinnamon.  Another idea is to top the brie with apricot preserve and pecans, or add roasted almonds to brie baked with honey and fresh rosemary sprigs .


Brie en Croute

Prep time:  15 min | Cook time:  20 min | Standing time: 20 mins


  • 125 g round of brie cheese
  • 1 sheet frozen puff pastry
  • 1 free-range egg, beaten


Step 1

Place brie on the pastry, draw a circle round it with a knife (about 1/2 inch larger than the cheese) and cut out the circle. Do the same again. Cut a strip of pastry approximately 1/2″ wide, long enough to wrap around the brie.

Step 2

Place the brie on one circle of pastry and tuck the sides up, place another circle on top of the brie and tuck the sides down, then wrap the pastry strip around. Optional: Press the edges down with a fork, and decorate the top with pastry shapes.  Brush over the top and sides with a beaten egg to glaze.

Step 3

Bake at 180 degrees for 20-25 minutes. Let it settle for 20 mins then cut into thin wedges and serve.
